WINE MAKING / MATURING
After the grapes have been squeezed they are taken to the tank where they remain for the process of cold extraction.
They stay there for 24h so as for the wine to obtain the color desired. Then fermentation with Indigenous Wild Yeasts takes place.
Alcoholic Fermentation in stainless steel tanks for about 12-14 days at controlled temperatures of 15-170ΟC.
