WINE MAKING / MATURING
Alcoholic fermentation is slow and takes place in stainless steel tanks for 12-15 days at controlled temperatures of 20-25 ΟC.
Fermentation with Indigenous Wild Yeasts.
Continuous wetting of the marc for the best extraction of aromatic compounds.
When malolactic fermentation is over, it is transferred to another stainless steel tank where it remains until its bottling.
ORGANOLEPTIC CHARACTERISTICS
Fermentation together with the marc until the end of the alcoholic fermentation at
controlled temperatures.
